Blueberry Cheese Cream Pie

This is a special Blueberry cheese cream pie recipe that I figured out after I could not find the right blueberry pie recipe. You would think it is easy to find, right? But it wasn’t. So I finally took several recipes and made one out of it. This is the best blueberry pie ever. The cream filling is just melting on the tongue and the crust is delicious. I used the Trader Joe’s frozen crust that is just as easy as it can get.

Ingredients Blueberry Cheese Cream Pie
Crust
The best ready made crust is from Trader Joe’s; it is the frozen one. You would defrost it and then just press gently into the pie form. You also can use a Graham cracker crust or make your own.

Recipe for the Crust:

2 cups of flour, 1 teaspoon of salt, 2/3 cups of Crisco ( or organic shortening), 5 to 7 tablespoons of ice water.
Sift flour and salt together in a bowl. Cut in Crisco with a pastry blender until mixture forms particles slightly larger than grains of rice. Sprinkle with ice water 1 tablespoon at a time. Toss gently with fork until all particles are uniformly moistened and will barely stick together. Shape mixture into a ball. Divide in half. Roll out each half on lightly floured surface. Makes a double crust for a 9-inch pie. If you don’t want to cover the pie with a crust, make a second one or freeze it.

Cream Filling
4oz cream cheese
4 tbsp creme fraiche
cinnamon
1 tsp vanilla
juice of 1/2 lemon, small
2 tbsp organic sugar
Fruit Filling
2 cups blueberries – ripe!
2 tbsp sugar
juice of 1/2 lemon, small
1 tsp potato starch or Tapioka
1 shot Vermouth red

Baking Instructions
– bake the crust per instructions or as given in the recipe
– for the cream filling mix all ingredients thoroughly with a hand mixer, then spread it onto the baked and cooled off crust.
– for the fruit filling wash blueberries and heat them in a pan with all ingredients until you see that they are coated with a jelly like layer. Then spread them evenly over the cream filling.
– Place in fridge for at least 1 hour.
