Sweet Peppers with Avocado Pesto Filling

Sweet peppers with avocado pesto filling is a great appetizer for a dinner party with many guests or for an intimate dinner such as for  Valentine’s Day. You would use small sweet peppers and not the bigger bell peppers. The sweet peppers come in different colors such as red, green, orange and yellow. Make sure they are fresh and crunchy.

Ingredients Sweet peppers with Avocado Pesto Filling

8 red, green, orange and yellow sweet peppers ( for each person 2)
1-2 ripe avocados
1 tbsp green pesto
salt, pepper
pinch of chili pepper

Cooking Instructions Sweet Peppers with Avocado Pesto Filling

– cut of the stem part of the pepper and take out seeds
– cut avocado in half, remove pit, place all avocado meat into a bowl and mash it with a fork
– add spices, mix well
– take a zip lock bag and cut off one small corner
– fill in the avocado mousse and squeeze it into the peppers.
That’s all. Your appetizer is ready!.
