Vegan Potato Salad with Mint Jelly Dressing

Ingredients Vegan Potato Salad

5 Potatoes, peeled
1.5 onion
Mixed Herbs, Turmeric to taste
Olive Oil
Pumpkin seeds
Mint Jelly, Honey for dressing

Cooking Instructions
Slice your potatoes into average thin discs, drizzle with oil, spice with turmeric and salt, then roast at 170 F for 2 minutes until cooked.
Slice Onion, fry in oil, add your mixed herbs, stir well.
Add the potatoes, mixing well. Remove from stove, add the pumpkin seeds.

Mix in a cup a teaspoon of mint jelly with olive oil, stir well.
Put potatoes on a plate and lightly dress with the mint jelly, don’t use too much because it will over power the taste.
Drizzle a little bit of honey on top of the dish.
