The title of this special recipe “Yummy Mini Chocolate Cakes” is definitely underrated! Imagine this irresistible combination: chocolate, blackberries and butter! Exactly, that’s what we thought too! The mini chocolate cakes must be from heaven!
Now this recipe gives you some baking options: Either you make about 12 mini cakes or cupcakes, or one nice cake of 8 inches diameter. It really depends on the occasion. For  a baby shower we would recommend the cup cakes or mini cakes. For a birthday one cake would be the best.
The great thing is, these mini cakes are also easy to bake. You don’t have to be a French confectioner to handle this recipe. Normally we like to enjoy the cakes fresh but these mini cakes taste the best the next day. Why waiting? So get your apron out and start baking!

mini chocolate cakes

Yummy Mini Chocolate Cakes

Servings: 12 mini cakes or cupcakes or 1 cake of 20cm or 8 inches

For the Base Cake
250g | 8.8oz plain (dark) chocolate, chopped
250g | 8.8oz caster sugar
150g | 5.3oz unsalted butter
125g | 4oz ground almonds
75g | 2.5oz plain (all purpose) flour
4 large eggs, separated
1/2 tsp vanilla paste or vanilla extract
pinch salt

For the Blackberry Buttercream
10-12 large blackberries, frozen or fresh
2 tbsp granulated sugar
1 tbsp water

For the Glaze
250g | 8.8oz icing sugar
115g | 4oz unsalted butter, at room temperature
2-3 tbsp double cream
